Stuffed baked apples with a vegan salted caramel sauce

Not only are these apples stuffed with our delicious oats, but they're stuffed full of goodness! Give these delicious winter warmers a try for yourself.


4 large cooking applesÌý

3/4 cup of apple and cinnamon porridgeÌý

1 heaped tablespoon of coconut oil, meltedÌý

Ìý2 tsp of Sweet Freedom Golden Syrup

30g of pecans, choppedÌý


Vegan salted caramel sauce:

4 DatesÌý

Pinch of saltÌý

2 tbsp of smooth almond or cashew butterÌý

4 tbsp of oat milkÌý

Desert spoon of coconut sugarÌý


Method:

Pre heat the oven to 160CÌý

Mix the porridge, honey, coconut oil and pecans in a bowlÌý

Then, Core apples with an apple corer and place them on a baking trayÌý

Fill the holes with the oaty mixture, any extra can go on the baking trayÌý

Bake for 12-14 mins (depending on how hot your oven gets, keep an eye on them to ensure they don’t collapse!)Ìý

Take out, drizzle with the salted caramel sauce and tuck in (goes amazingly with vanilla ice cream)Ìý
